Braised Red Cabbage and Potato with Egg fries is one of the healthiest and palatable Red Cabbage Recipe braised. It is an effortless dish which is the combination of Red Cabbage with Garlic, Spring Onions, baked Potatoes and Egg fries with some seasoning. It can be a perfect platter to celebrate Halloween. You can use your favourite dressing and seasoning to cherish the dish.
Red Cabbage is also known as Purple Cabbage. It generally turns bluish after cooking. Addition of any citric element can help it to retain its original colour. It is mostly accompanied with seasonal roasts in Christmas. Red Cabbage is one of the most important elements in many Halloween dishes because of its red hue.
Red Cabbage is one of the vegetables that I had never tried while I was in India. But after coming to London, I have seen its huge popularity and availability. It encouraged me to try something with this vegetable in my kitchen.
Though I have prepared many coleslaw recipes, soups and Braised Red Cabbage recipe but still Braised Red Cabbage and Potato with Egg fries is very dear to me. It is the first Halloween dish that I prepared in my life which makes me both emotional and happy at the same time. Just one day before Halloween, one of my British friend asked me ‘What’s your special menu for this Halloween?’ This question made me think and I have decided to prepare some platter for the day.
After preparing the Braised Red Cabbage recipe, when I have tried it, I was really very happy with the taste and texture of the dish. When I served the dish to my friends, they complement my cooking a lot. It is a very quick and easy recipe which requires very minimal and easily available ingredients to get prepared.

What is braised cooking?
Braising is a cooking method where first the food is sautéed in high flame and then it is covered and cooked in low flame. Sometimes, even some liquid is added during the time of low flame cooking.

Red Cabbage Recipes
Red Cabbage Recipe healthy can be prepared in different ways in different regions around the world like baked, roasted, boiled, stir fried, braised, slow cooked and even raw. Red Cabbage is one of the most versatile vegetables which is used to prepare thousands of healthy and delectable recipes. It is hugely used in European countries to prepare many traditional recipes and Braised Red Cabbage and Potato with Egg fries is inspired from those.
Braised Red Cabbage and Potato with Egg fries with step by step photos and instructions has been provided in the ‘Instructions’ section of the recipe. But before jumping into the recipe, I would like to explain few things about the process of cooking and few facts about Red Cabbage.

  • They are rich in anthocyanins which helps to get rid of many heart problems.
  • They are full of Vitamins specially Vitamin C and Vitamin K which are good for our bones.

How to cook Red Cabbage?
In this Red Cabbage recipe simple, first I have microwaved some Potatoes and then peeled their skin. Then I have cut them into chunks and kept them aside.
I have finely chopped some Garlic, Spring Onions and fried them one by one for some time. Then I have added the shredded Red Cabbage and sautéed them. After this, I put the flame in low and cooked it in low flame for some time. When the Red Cabbage became soft, I have added the microwaved Potatoes into the pan.
I have squeezed some Lemon juice into the pan to resist the Red Cabbage to turn blue. It gives a tangy touch to the dish and enhances the taste of the dish. Red Cabbages normally turn blue or dark after cooking and to avoid it some acidic fruit or Vinegar must be added.
At the end, I have cracked and poured a couple of Eggs on the pan and cooked it in lowest flame until they are done.
I have used Black Pepper powder, Oregano, dried Parsley and some Salt as seasoning for the dish. These gives a nice flavour to the dish. Red Cabbage itself has a unique flavour and many people love that. So, I have not added too much spice into it. But you are spicy food lover like me then you can sprinkle some extra seasoning and dressing to give a spicy kick to the dish.

Ingredients:

  • ¼ large Red Cabbage, shredded
  • 3 Potatoes
  • 2 Eggs
  • 6 cloves of Garlic, finely chopped
  • 2 stalks of Spring Onion, sliced
  • 1 tablespoon Lemon juice
  • ½ teaspoon Black pepper powder
  • ½ teaspoon Dried parsley leaves
  • ½ teaspoon Oregano
  • Salt to taste
  • 1 cube Butter for cooking

Instructions:
  1. Wash the Potatoes and pat dry them with kitchen tissue or kitchen towel.

  2. Pierce the body of the Potatoes with the help of a fork.

  3. Put the Potatoes on a microwavable plate and microwave them in full power for 5-6 minutes.

  4. Turn the Potatoes in between after 3 minutes.
  5. Take the Potatoes out of the microwave and check with a fork, knife or toothpick whether they are done or not. If not, then cook it in microwave for another minute.

  6. Transfer the microwaved Potatoes in cold water to cool down.

  7. Peel the skin of the Potatoes carefully.

  8. Cut the Potatoes into chunks and keep them aside.

  9. On the other hand, take a wide pan and put it on flame.

  10. Add 1 cube of Butter into it and put the flame in low.

  11. Once the Butter melts and start bubbling, add chopped Garlic into it.

  12. Fry them till golden in colour.
  13. Add Spring Onions and fry them for a minute in medium flame.

  14. Add the shredded Red Cabbage into the pan and sauté them in high flame for couple of minutes. Stir in between when required.

  15. Then put the flame in low and cook them for another 5 minutes. Stir occasionally.
  16. Add Lemon juice into the pan and give a nice mix.

  17. Cook them in low flame until the Cabbage become soft.
  18. Add Salt and give a nice mix.

  19. Cook them in medium flame for a minute.
  20. Sprinkle Black Pepper powder into the pan and mix it well.

  21. Put the flame in low and add the microwaved Potatoes (Step 8) into the pan.

  22. Add the dried herbs into the pan and mix it well.

  23. Make some space in the pan and crack two Eggs into it.

  24. Sprinkle some salt over the Eggs.
  25. Cook them in lowest flame until the Eggs are done.
  26. Switch off the flame and put the pan down.

Serving Instruction
Transfer the Braised Red Cabbage and Potato with Egg fries on a serving plate and serve hot or warm for the best taste. Serve immediately and enjoy the delectably healthy dish with your favourite seasoning or dressing.
