While in India, I had never seen Butternut squash. In fact, I did not even hear about it while I was there. But after coming to the UK, I have seen the huge popularity and availability of Butternut squash in supermarkets as well as vegetable shops. It always made me curious to know about the vegetable. Then the first question which raised in my mind was –

What is Butternut squash?
Butternut squash is a winter squash which is also known as Butternut pumpkin and Gramma. It is a fleshy vegetable with thick and hard skin. It contains orange pulp inside with some white seeds. It tastes quite like pumpkin. It is sweet in taste and has a nutty flavour.

There are few tricks to choose a perfectly ripe Butternut squash. If you are new to pick butternut squash, then first check its stem. If it is unbroken then it can be kept for longer. If the stem is not there, then the squash may ripe soon.
Secondly, check its skin colour. The darker shade of the skin is better. The presence of green patches might indicate that it is not fully ripen.
One day to resolve my curiosity, I grabbed a small Butternut squash from the supermarket. After coming back home, the very next question which raised in my mind was ‘How to cook Butternut squash?’ After completing my research, I decided to prepare a soup recipe healthy with it.
Honestly, I was not very fond of soup recipe healthy until I had come to the UK. Normally, in restaurants, I always used to skip soup and directly ordered main course. But after coming to London, I have tried and tasted different varieties of soup recipes with some basic vegetables and I love it.
When I prepared the Butternut squash soup recipe with fresh butternut squash, everyone loved it. It is a perfectly balanced soup recipe which can be considered equally tasty and healthy. Now it has become one of our family hits which is regularly prepared in winter and autumn days for some warmth and comfort.

How to make Butternut squash soup?
To prepare the Butternut Squash Soup Recipe, first I have peeled and deseeded the squash. Then I have cut them in medium chunks. It is the toughest and most time-consuming part of the recipe. Frozen butternut squash cubes can also be used for the recipe.
After this, I have cut white onions, garlic, bell pepper and carrots for the Butternut squash recipe healthy.
First, I have added oil into a pan and cooked the onions and garlic. Then I have added carrots and Butternut squash. I covered the pan and cooked them in low flame for some time and added the bell peppers into it. Then I have added the stock into the pan to cook the veggies till tender.
I have cooked the veggies in chicken stock. If you like you can substitute it with vegetable stock or beef stock. After that, I have blended the content till smooth.
In this soup recipe easy, I have used crushed Black Pepper and dried basil leaves to flavour up the soup.
Sour cream is an important component for the recipe but to make the recipe healthier, I have used whipped yogurt into the soup. Yogurt complements the taste of the dish and gives a creamy texture to the soup.

How to make smooth Butternut squash soup?
To make the soup recipe healthy smooth and silky, allow the content to cool down a bit then transfer the content in the large jar of a blender and make a smooth paste of it. You can strain it after that for better finishing.
Otherwise, take it in small portions in a medium jar of a mixer grinder and make paste of it.
Hand blender can also be used for the same.

Ingredients:

  • 1 medium Butternut squash, peeled and cut into medium pieces
  • 1 large white Onion, sliced
  • 4 cloves of Garlic, chopped
  • 1 large Carrot, peeled and cut into medium pieces
  • 1 red or orange or yellow Bell pepper, deseeded and diced
  • ¼ cup Yogurt, whipped
  • ½ teaspoon crushed Black Pepper
  • ½ teaspoon dried Basil leaves for cooking
  • 500 ml Chicken stock
  • Salt to taste
  • 2 tablespoons Olive oil for cooking
  • ¼ teaspoon dried Basil leaves for garnishing
  • ¼ teaspoon crushed Black Pepper for garnishing

Instructions:
  1. Put a pan on flame and let it become dry.
  2. Add 2 tablespoons of Olive oil into the pan and let the oil become hot.

  3. Put the flame in low and add chopped Garlic into the pan and fry them till golden.

  4. Add sliced Onions and give a nice mix.

  5. Cook them in medium flame for 2-3 minutes until they become translucent.
  6. Add the Carrot pieces into the pan and give a nice mix.

  7. Add butternut squash pieces into the pan and mix it well.

  8. Cover the pan and cook it in medium flame for couple of minutes.
  9. Add Salt and give a nice stir.

  10. Add Bell pepper chunks into the pan and mix it.

  11. Cover the pan and cook it for another 5 minutes in low flame.
  12. Add Chicken stock into the pan and stir it well.

  13. Cover the pan and cook it in medium low flame for 25-30 minutes till the Butternut squash becomes tender. Check the squash before switching off the flame. If not done, then cook for extra 5 minutes.
  14. Switch off the flame and put the pan down.
  15. Rest the Butternut squash mixture to cool down.

  16. Transfer the mixture into the jar of a blender. Blend it till smooth and velvety.

  17. Pour the content into a different bowl.

  18. Add whisked Yogurt into the mixture and mix it thoroughly.

  19. Sprinkle some crushed black pepper, dried Basil and mix it well.

  20. Transfer the soup into serving bowls.

Serving Instruction
Transfer the Butternut Squash Soup in serving bowls. Reheat in microwave, if required. Serve immediately to enjoy best taste. Sprinkle some dried Dill basil, crushed black pepper on the top for garnishing. Serve warm with your favourite sides and enjoy your healthy-yummy soup.

This is a nice soup! It is great on a cold winter’s afternoon or evening! The one thing I like to add to it is about a tablespoon of fresh grated ginger and maybe a half cup of apple juice. The apple juice adds some complexity to the sweetness and the ginger adds a zing to the recipe and a little heat on the tongue and compliments the sweetness of the squash perfectly.
