Scrambled Eggs is one of the most popular as well as healthy breakfast dishes worldwide. Its tender and fluffy texture and irresistible taste makes it a classic dish. Avocado-Sweetcorn Scrambled Eggs is one of the variations of this dish. In this preparation, Egg-Milk mixture is cooked and combined with chopped Avocadoes, Sweetcorn and some seasonings. It is ideally served with bread toast and a glass of juice to complete the breakfast.
Yesterday, while I was looking into my kitchen pantry, I found few Eggs, Sweetcorn and Avocados. Then I came up with the idea to prepare this dish. As I was preparing this dish for the first time, I was not completely confident about the dish. But when I served it to my family, they couldn’t stop to devour it. After finishing off their own shares of Avocado-Sweetcorn Scrambled Eggs, they asked me for some more. I was so glad to see the satisfaction in their eyes. Then I decided to share this recipe with you because my cooking journey is incomplete without you.
Avocado-Sweetcorn Scrambled Eggs is a very simple and easy recipe. It hardly takes 10-15 minutes to get it done including the preparation time. Just few commonly available ingredients of your kitchen can fulfil the requirements to prepare this dish. I have not used any Cream or large amount of Butter to uphold health with taste.
In this dish, you will get the velvetiness of Avocado, a tinge of Sweetcorn’s sweetness equally complemented with the buttery soft scrambled Eggs. The amalgamation of these three elements create a magical taste which can be enhanced further with your own choice of favourite seasonings. Nothing can go wrong with the recipe, if you are master in preparing Scrambled Eggs. But before jumping into the recipe, let me share few tips and tricks to prepare a perfectly fluffy and soft Scrambled Eggs.

How to cook perfectly tender & fluffy Scrambled Eggs?
  • To prepare perfect Scrambled Eggs, its not necessary to add Cream or tons of Butter with the Eggs. The classic Scrambled Eggs preparation uses neither of these two elements.
  • For tender Scrambled Eggs, add small amount of Milk into the Eggs and beat it nicely until they get mixed completely.
  • Always cook the Egg mixture in low flame.
  • After pouring the Egg mixture into the pan, don’t disturb it until the edges of the Eggs get set.
  • Then stir the Egg mixture from the edges towards the centre with the help of spatula.
  • Repeat the process gently, until the mixture is no more runny and uncooked.
  • Don’t stir the mixture frequently.
  • Don’t overcook the Eggs because the scrambled Eggs will become dry.

What kind of utensils to be used for preparing Scrambled Eggs?
  • Always use wide pan where the Egg mixture can spread evenly.
  • Use non-stick pan to prepare Scrambled Eggs. Because if the eggs get stuck to the bottom then its next to impossible to get the perfect texture.
In this dish, I have used frozen sweet corns. Frozen corns after defrosting becomes soft and ready to eat. But fresh sweet corns can also be used for this dish.
Note: If you are using fresh corns, then don’t forget to boil them before adding into the Scrambled Eggs for best results.
I have used ripe Avocados instead of Mayonnaise or Cream to make the dish creamier and healthy. Avocados pair up amazingly well with any form of Eggs. It does not matter whether it is boiled, fried or poached.
In this preparation, I have used Salt, crushed black Peppers and dry Oregano for seasoning. But you can use any of your favourite seasonings to make the dish tempting.

Ingredients:

  • 2 Eggs
  • 70ml full cream Milk
  • ½ Avocado, chopped
  • 3 tablespoons Sweetcorn
  • ¼ teaspoon Black Pepper, coarsely ground
  • Pinch of Oregano, for sprinkling
  • Salt to taste
  • Butter for cooking

Instructions:
  1. Break the Eggs into a bowl.

  2. Add Milk and beat it nicely with a fork until it gets mixed up evenly.

  3. Add some Butter into a non-stick pan and put the flame in low.
  4. Let the Butter melt and spread it to the bottom of the pan evenly.
  5. Once the Butter starts bubbling, pour the mixture (Step 2) into the pan and cook it in lowest flame until the edges of the mixture gets set.

  6. Stir it from the edges towards the centre with the help of a wooden spatula.

  7. Repeat the process till the mixture is no more runny and uncooked.
  8. While the Eggs are done add Avocado, Sweetcorn immediately and mix them properly.

  9. Then switch off the flame and put the pan down.Note: Any extra heat may make the Eggs to dry and loose its softness.

  10. Transfer them on a serving plate and sprinkle some Salt, crushed black Pepper and Oregano.

Serving Instruction
Always serve the Avocado-Sweetcorn Scrambled Eggs immediately to get the best taste. Serve hot or warm with choice of your favourite seasonings and give a deliciously healthy start to your day.
