Sandwiches are one of the most convenient meals I have ever seen in my busy life. If you have all the required ingredients in your pantry then nothing can be quicker and simpler than preparing sandwiches. I have the fascination for different ranges of Sandwiches from my school days.
I have learnt to prepare different types of Sandwiches after shifting to London. Here, all my friends love Sandwiches and hence it requires me to try different varieties of them. Now, I have become addicted to it. Whenever I run out of time, these Sandwiches have rescued me many times. Vegan Avocado Toast Sandwich is one of them. It is very simple to prepare and is equally super delicious and healthy.

My husband is a huge Avocado fan and does not skip any chance to bring Avocados at home. In few years of our marriage, I have already prepared hundreds of variations of Sandwiches, Wraps, Pastas and drinks with Avocados.
During this journey, I have developed a wonderful experience on different preparations with this delicious fruit. Avocados are one of the most versatile fruits I have ever seen in my life. They can easily gel up with any combination and creates magical dishes. Avocados are creamier than Brie and can make any dish super rich and velvety. But you must pick up perfectly ripe ones for each preparation.
Before jumping into the recipe, I would like to share few interesting tricks and tips to choose perfect Avocados for any preparation and its health benefits with you.

How to choose Avocados for any dish?
  • Always choose ripe and ready to eat Avocados for best results but make sure they are firm in texture.
  • Press the Avocados with your finger and if you feel that it’s going inside too easily or is too soft from inside then it’s too ripe and can end up being mushy which we never want.
  • If the Avocados are bright green in colour and the skin is too hard then those are not ready to eat.
  • If you have enough time, then you can buy green raw Avocados and wrap them in paper for 1-2 days. They will be ready to use.
  • The perfectly ripe and firm Avocados have dark skin colour than normal ones. If you press the skin and it yields pressure, then it’s perfect for use.

In this recipe, I have used chopped Avocados not have not mashed them. For this recipe, I have tried something different from the basic and added few elements which makes the sandwich taste more than divine. Yes, you must try it once to believe me.
Many people complained about the dryness of sandwich when you add chopped Avocados. But the mashed Avocados can never give you such soft bite like sliced or chopped Avocados. In this Sandwich, you would be able to taste each of the elements individually without loosing their identity and that’s the beauty of this recipe.
I have added Onions, Tomatoes and Basils into this filling. Onions merge amazingly with Avocados and creates better tastes and texture. The Tomatoes give a nice sweet-tangy taste which actives our secret saliva. The freshly chopped Basils give gorgeous flavour to the filling.
I have used vegan Mayonnaise to stick to pure vegan for the recipe. It is easily available in shops and supermarkets these days. It makes the sandwich more moist and creamier.
I love seasonings and always go heavy with it. But in this recipe, I have used very basic seasoning of Salt and Pepper.
I have toasted wholemeal bread for the recipe to uphold the health with taste. You can use your choice of bread like White bread, Multigrain Bread, Wholegrain Bread, Brown Bread etc.
I have toasted them on a pan, but if you have Toaster, you can freely use it.

Ingredients:

  • 4 slices of Bread
  • 1 ripe Avocado, chopped
  • ½ Onions, finely chopped
  • ½ Tomato, deseeded and finely chopped
  • 1 tablespoon Basil, chopped
  • ¼ teaspoon ground Black Pepper
  • 2-3 teaspoons Vegan Mayonnaise
  • Salt to taste

Instructions:
  1. Put the Bread slices on a pan and toast them in medium flame.

  2. Toast both the sides of Bread until it becomes light brown and crispy.Note: You can also use toaster if you have one.

  3. On the other side, cut the Avocado into half and remove the seed.

  4. With the help of a spoon, scoop out the flesh from the skin and chop them.

  5. Transfer it into a mixing bowl.
  6. Add the finely chopped Onion, Tomato and Basils into a mixing bowl.

  7. Season with Salt and Pepper.

  8. Spread the mixture (Step 7) on the Bread slices.

  9. Squeeze out some Mayonnaise in Z-pattern over the filling.

  10. Cover the Sandwich with the other slice of Bread.
  11. Cut them in two halves.

Serving Instruction
Transfer the Vegan Avocado Toast Sandwich to a serving plate. Serve immediately for the best taste. Enjoy the yummiest sandwich with your family and friends.
