Asian cucumber salad is one of the most popular easy salad recipes in the different subcontinents of Asia. It is easy to make, delicious and bursting with refreshing flavours. This crunchy asian cucumber salad is the amalgamation of thin-sliced English cucumber, red peppers, onion, garlic, olive oil, soya sauce, rice vinegar, honey, chilli flakes, sesame seeds and some seasonings. It is mostly served as a side with grilled fish or meat or with tostadas, tacos, burritos, quesadillas and even with rice or noodles.

This crunchy Asian cucumber salad is an incredibly simple recipe that can be prepared very easily at home using very regular and easily available ingredients. The time-consuming part of the recipe is to cut the cucumber evenly. Other than this, nothing can be easier than this salad recipe. But if you have a mandoline slicer then please go for it to make your job quicker and easier.

This asian cucumber salad is a huge hit in my house. My husband and daughter just love it. Even though I prepare a big bowl of it in summer get-togethers, I always end up with an empty bowl. Many of my friends are vegan and they just loved the easy salad recipe and enjoy it thoroughly.

  • First, add salt to the sliced cucumber allow it to rest for half an hour to release the liquid. Then strain the liquid before adding the dressing.
  • The addition of a little bit of honey gives a slightly sweet touch which enhances the taste of the dish.
  • Don’t skip toasted sesame seeds from this recipe. It gives a nice bite to the salad with a soothing flavour.
  • The addition of chilli flakes gives a heaty touch to the cucumber salad.

You can use any kind of cucumber to make the salad recipe. You can use normal cucumber, English cucumber and even Persian cucumber aka mini cucumbers for the recipe.


How to cut cucumber for salad?

Normally, the cucumber is sliced for the recipe. The thickness of the slices is completely your own choice. I personally prefer to cut them into thin slices of around 0.5 cm thickness.

Few people prefer to peel off the skin and few do not. According to me, if you are using normal cucumber then you can peel off the skin. But if you are using English cucumber or cute Persian cucumbers then you don’t need to peel off the skin. They have got very thin skin. Other than that, this edible skin contains a lot of fibre and increases the crunchy factor of the salad recipe.


Is there any shortcut to preparing Asian cucumber salad?

To save both your time and effort, you can use a mandoline slicer to slice the cucumber evenly.


How to serve Asian cucumber salad?

After preparing the Asian cucumber salad, cover it and refrigerate it for at least 1 hour so that the cucumbers can absorb all the flavours into it. Then serve the salad as a side with your favourite main course.


How to store the salad?

This Asian cucumber salad recipe can be stored in the fridge in an airtight container for 2-3 days. After that, it loses its refreshing flavour, the crunch of cucumber and taste.


Can I use maple syrup instead of honey for the recipe?

Yes, you can. Just remember maple syrup is much sweeter than honey. So, adjust the amount accordingly.


How to make Asian cucumber salad?

To prepare the Asian cucumber salad, first, wash the cucumbers and slice them evenly. Then transfer them to a large bowl and add some salt to it. Mix it properly and cover the bowl. Allow it to rest for half an hour. Within that time the cucumber will release a lot of fluid. Just strain out the excess liquid from the cucumber. If you are in hurry, then you can skip this step. But I highly recommend this step because the liquid released from the cucumber after adding water makes the salad dressing thinner and makes the salad taste blunt.

In the meantime, thinly slice the red onion and finely chop red pepper, garlic for the salad.

I always prefer to use red onion for the recipe. It gives better flavour and texture to the crunch Asian cucumber salad recipe.

Then transfer the red onion, red pepper and finely chopped garlic into the bowl.

Add rice vinegar, soya sauce, honey, sesame oil, chilli flakes and toasted sesame seeds, one by one into the bowl and mix all the ingredients thoroughly with a fork or spoon. Then cover the bowl and refrigerate it for at least 1 hour so that the cucumbers can absorb all the flavours into it. Now the Asian cucumber salad is ready to serve.

  • 1 English cucumber
  • ½ red Bell pepper
  • ½ small red Onion
  • 1 teaspoon Salt
  • ½ tablespoon Honey
  • ½ tablespoon Sesame oil

Instructions:
