While I was in India, I was not aware of this tiny vegetable – Brussels sprouts. I never saw or tasted this unique vegetable. But after coming to London, I have seen the huge craze among people for brussels sprouts. In fact, it is easily available in supermarkets as well as vegetable shops of the UK.
Brussels sprouts look similar to cabbages in mini version. They always made me curious to know about the vegetable after coming here. One day, I resolved my curiosity by grabbing a pouch of Brussels sprouts from the supermarket. After coming back home, the very next question which struck in my mind was ‘How to cook Brussels Sprouts?’
My first cooking experience with Brussels sprouts was poor and unsatisfactory. It got overcooked and became mushy which made the brussels sprouts taste bland. But after that experience, I got alerted and tried different techniques to prepare perfect Brussels Sprouts.

Roasted Brussels Sprouts recipe
Roasted Brussels Sprouts recipe is prepared in multiple ways varying the combinations of ingredients. It is sometimes prepared in balsamic vinegar or chestnuts or with crispy bacon, with garlic and spring onions or sometimes simply with salt and pepper. Every preparation tastes outstanding but different from each other.

I went through Roasted Brussels Sprouts recipe over internet and tried them too. But this Honey mustard brussels sprouts will always be special to me. I have roasted the whole brussels sprouts after putting them in skewers which gave the dish a classy look with delicious crispy outer layer.
Honey mustard brussels sprouts with step by step photos and instructions have been provided in the ‘Instructions’ section of the recipe. But before directly jumping into the recipe, let me share few interesting facts about Brussels Sprouts and the recipe.

How to trim Brussels Sprouts for the recipe?
For this recipe, I have used smaller size of Brussels sprouts and have cooked them in whole rather than cutting them into halves. To trim them, I have cut the head of the Sprouts and then remove their outer layer.

How to cook Brussels Sprouts?
Brussels Sprouts is a very tricky vegetable which must be handled very skilfully. They can get cooked in many ways.
Few people just boil them in salted water and serve them with some dressing. But it would only work if you are a die heart fan of Brussels Sprouts. In this way, the Brussels Sprouts do not smell great and become tender in texture. Rather than boiling them, I always prefer them to be blanched and then stir fried.
But my most favourite way of cooking Brussels Sprouts is oven roasted. This is the easiest way to cook them to get the best result. Oven roasted brussels sprouts give crispy char outer layer which make them taste awesome. But during the time of oven roasting, few things must be taken care of when it comes to Brussels sprouts.
  • It is very important to pat dry them after cleaning and washing.
  • Then it should be coated with generous amount of salt and olive oil before going to the oven. It is a very basic but important step to get perfect taste and texture.
  • Make sure to put the cut side down in the baking tray for crispy sides.
  • Don’t overcrowd the batches of brussels sprouts. Always place them in single layer or else the moisture which the Brussels sprouts would release will touch the others. This may make them soggy.
  • Don’t roast it in low temperature for a long time. The brussels sprouts may become soft and soggy for slow cooking.
  • Roast them in high temperature for perfect outer crisp and caramelization.

How to reheat Roasted Brussels Sprouts?
  • The best way to reheat Brussels sprouts is in oven. It keeps the texture perfect.
  • You can reheat it in a wide pan too in medium high flame.
  • But it’s always better to avoid microwave for reheating brussels sprouts because it makes them soft and soggy.

How to make honey mustard brussels sprouts?
For the Honey mustard brussels sprouts, first I have trimmed each of the brussels sprout and washed them. After that, I have pat dried them with the help of kitchen towels and inserted them in small batches in skewers. I kept little gap between two brussels sprouts because direct contact of brussels sprouts with each other can make them soggy by releasing moisture.
I have placed the skewers on wax paper lined baking tray. Wax paper helps to roast the brussels sprouts quite tidily.
On the other hand, I have taken a bowl and mixed all the essential ingredients to prepare the Honey-Mustard sauce. I have used English mustard, honey, olive oil, chilli flakes, black pepper and salt to prepare the sauce.
Then I have brushed each brussels sprout with the mixture evenly and coated them nicely. After this, I have placed the brussels sprouts straight into the oven for 30-35 minutes in high heat.

Ingredients:

  • 250 Grams Brussel Sprouts, trimmed
  • 1 tablespoon English Mustard
  • 1 tablespoon Honey
  • 1 tablespoon Olive oil
  • ½ teaspoon Chilli flakes
  • ½ teaspoon Salt
  • 2 pinches of crushed Black pepper

Instructions:
  1. Preheat the oven at 200° C for 10 minutes.
  2. Line the baking tray with wax paper or aluminium foil.
  3. Wash the Brussels Sprouts and pat dry them perfectly with the help of kitchen towel.

  4. Insert the brussels sprouts in skewers. Leave a little gap between each brussels sprouts. Keep them aside.

  5. On the other hand, take a bowl and add English mustard, honey, olive oil, chilli flakes, black pepper and salt into it.

  6. Mix all the ingredients nicely with the help of a brush or fork.

  7. Brush the Honey-Mustard sauce on each brussels sprout properly and evenly.

  8. Place the skewers on the Baking tray.

  9. Put the tray in the centre of the preheated oven and bake them for 30-35 minutes. Turn the skewers after 20 minutes.
  10. Check the Brussels Sprouts before removing from the oven. Roast them until slight char occurs on the outer layer of the Brussels sprouts. It should be crispy from outside and tender from inside.
    Note: The duration of roasting may vary for different reasons like the quantity or size of the Brussels Sprouts or sometimes for the appliance too.

Serving Instruction
Transfer the Honey mustard brussels sprouts on a serving plate. Serve immediately to enjoy its best taste. Serve them as a side with some roasted meat and enjoy the crispy, caramelized, delicious Brussels Sprouts.
