Chocolate chip cookies without brown sugar???? Is it possible?? The answer is YES, absolutely. Though in the baking world brown sugar is considered as one of most essential ingredients, especially when chocolate is involved in it, but it is not mandatory. Cookies, cakes, brownies can also be prepared without brown sugar with a slight difference in texture and taste. But who knows you may like the different texture and taste more as compared to the normal one!
Many people consider baking as a formula-based cooking where ingredients to used and measurement of these ingredients are fixed. To some extent, its true but sometimes in daily life when we plan to bake something, few things might not be available in the kitchen of that certain day. At that point, it’s not fair enough to drop the complete plan of baking for few of those missing ingredients.
I always prefer to experiment new dishes in my oven. Sometimes, completely new recipe and sometimes substituting the regular ingredients of an old recipe. Who knows with those experiments you will get something better than the regular recipe? I must consider this delectable chocolate chip cookies without brown sugar is one of my epic success stories.
I have a sweet tooth and homemade cookies are one of my biggest weakness. During the pandemic, on one fine day, I planned to prepare easy chocolate chip cookies but suddenly I realised that I did not have brown sugar in my kitchen. But I was so desperate to prepare those cookies that I decided to prepare it with caster sugar instead of brown sugar. But I got amazed with the result of the chocolate chip cookies without brown sugar.

But before talking much about the recipe, let me share few basic facts about brown sugar and the reason behind its usage in baking chocolate chip cookies because for many beginners it is difficult to understand that why the variety of sugar matters for a simple cookie recipe. In fact, many novices don’t know the difference between the refined sugar and brown sugar.

What is brown sugar?
Brown sugar is a kind of sweetener which is brown in colour. It is the unrefined variety of white sugar. It can also be prepared by the combining the molasses into the refined white sugar. Brown sugar usually comes in two different varieties
Light brown sugar where the colour is lighter brown because of the presence of less molasses.
Dark brown sugar where the shade is dark brown due to the presence of high molasse content.
Brown sugar is moist in texture as compared to refined white sugar due to the presence of molasse. So, it needs to be measured tightly packed.
Now, the question is what is molasses?
Well, molasses is a dark brown colour syrup with the texture like maple syrup. Basically, it is the residue after the process of preparing refined sugar. It is the leftover of the boiled sugar cane juice.

Difference between the brown sugar and refined sugar chocolate chip cookies
Brown sugar gives chocolate chip cookies a brown colour due to the presence of molasses. On the other hand, the usage of refined sugar does not give that brown shade to the cookies.
Brown sugar makes the chocolate chip cookies chewy and gussy in texture. On the other hand, refined sugar makes the cookies crispier and less chewy in texture.
There are thousands of chocolate chip cookies recipes that are available over the internet running behind the perfection. But I must say this chocolate chip cookies without brown sugar is a perfect cookie recipe for the novice. I have tried my level best to keep the recipe as simple as possible with the simple ingredients.
The exciting part of preparing chocolate chip cookies homemade is that the control is completely in your hand. You can prepare it small, medium or large according to your preferred size. You can bake it till soft or crispy according to your own preferences.

This chocolate chip cookies without brown sugar has got crispy edges and soft from the centre. It is super easy to make and can be doubled or tripled in quantity to prepare in large batches too. These cookies could be a perfect companion for small tea parties.

How to make chocolate chip cookies?
To prepare the chocolate chip cookies without brown sugar, it is very important to use all ingredients at room temperature. First measure all the ingredients to keep everything handy.
Then sieve the all-purpose flour, salt and baking soda to make the dry content airy and keep them aside.
Take the butter (at room temperature) and sugar into a large mixing bowl and mix it till creamy texture with a hand mixer in medium speed.
Add an egg and mix it well for half a minute with hand mixer. Add vanilla extract into the mixture and combine it well.
Then add the all-purpose flour mixture into the Butter-Sugar mixture in small portions and combined it slowly with a spatula.
At the end, add the hero of the recipe chocolate chips and combine it well.
Cover the whole mixture with cling film and refrigerate it for an hour.
Take the cookie dough out from the refrigerator and scoop out the dough and place it on the parchment paper lined baking tray. Keep at least 2 inches space between the scoops of dough to spread during baking.
Then transfer the baking tray into the preheated oven at 180°C/160°C Fan for 15 minutes. I always like it crispier from edge and soft at the centre.
If you like soft chocolate chip cookies, then you can bake it for lesser time around 13-14 minutes. But if you like extra crispy and crunchy biscuits then bake it for longer around 16-18 minutes.

Ingredients:

  • 150 grams semi sweet Choco chip
  • 190 grams all-purpose Flour
  • 150 grams caster Sugar
  • 115 grams Butter
  • 1 Egg
  • ½ teaspoon Baking soda, levelled
  • 1 teaspoon Vanilla extract
  • ½ teaspoon Salt

Instructions:
  1. Place a sieve on a large mixing bowl.
  2. Sieve the all-purpose flour, salt, Baking soda together and keep it aside.

  3. Take another mixing bowl and add soft Butter into it.

    Note: Make sure no water droplets are there in the mixing bowls.

  4. Pour the caster sugar into the mixing bowl and mix it with the help of a hand mixer. Mix all the ingredients evenly in medium speed till it becomes smooth and creamy. Scrap the sides and bottom with the help of a spatula when required.

  5. Add egg into the bowl and mix it in medium speed for another 30-45 seconds.

  6. Add vanilla extract and mix it well. Keep the hand mixer aside.

  7. Add the all-purpose flour mixture (Step 2) in 2-3 batches to the butter-sugar mixture and combine it slowly to an even mixture with a rubber spatula.

  8. Add semi sweet choco-chip into the mixture and combine it well.

  9. Cover the cookie dough with cling film and refrigerate it for an hour.

  10. Take the baking tray out. Measure and cut parchment paper and place it over the tray.

  11. Take the cookie dough outside and scoop out the dough and place it on the parchment paper lined baking tray. Keep at least 2 inches space between the scoops of dough to spread during baking.

    Note: If you like small shaped cookies then take out the dough accordingly with a spoon and shape it round with hands. The baking time may vary due to the different size of cookies.

  12. On the other hand, preheat the oven at 180°C/160°C Fan/Gas 4.
  13. Place the baking tray in the middle of the preheated oven.

  14. Bake the cookies for 14-18 minutes. For me, it exactly took 15 minutes.

    Note: If you like soft cookies, then check it in 13-14 minutes and if you like extra crispy cookies then bake it for longer around 16-18 minutes.

  15. Place the cookies on wire rack and allow it to cool down.

  16. Store the cookies in an airtight container.

Serving Instruction
You can serve the chocolate chip cookies without brown sugar warm or after cooling down. But, I must say warm cookies straight from the oven with a glass of cold milk is a complete bliss. Serve the choco chip cookies with a cup of tea or coffee and enjoy this homemade delight.

How to store chocolate chip cookies?
The biggest trouble occurs while storing the delicious chocolate chip cookies because it disappears so quickly. The texture of the chocolate chip cookies without brown sugar change from crispy to soft, due to moisture in air. The best way to store it in airtight container at a cool dry place for 3 days.
