Egg-Tomato Mayo Sandwich is one of the most popular sandwiches worldwide. Undoubtedly the reason behind its fan following is its irresistible taste without compromising health. In this recipe, chopped boiled Eggs, chopped Tomatoes are combined with Mayonnaise, English Mustard and some seasoning. This luscious filling is spread on a bread slice and then topped with another bread slice.
Egg Mayo Sandwich is one of the oldest and classic sandwich recipes which is hugely popular in the UK. Eggs are the main Hero of this Dish. English people always prefer simplicity to maintain the authenticity of the dish. So, they don’t like to experiment much on it. In the US, the scenario is completely different. Egg Salad Sandwich are hugely popular there and they try many things with Eggs for variation.
I am a foodie and I love both the concepts and preparations. When it comes to Eggs, other than raw, I can have it in any form. In Egg-Tomato Mayo Sandwich, on one side you will get the creaminess and softness of Eggs and on the other side the tanginess and sweetness of Tomatoes.

Sandwiches are one of the handiest meals I have ever seen in my life. If you have all the required ingredients in your kitchen then nothing can be faster and easier than preparing sandwiches. I have the fascination for different ranges of sandwiches from my school days.
I have learnt to prepare different types of sandwiches after shifting to London. Here, all my friends love sandwiches and hence it requires me try different varieties of sandwiches. Now I have become addicted to it. Whenever I run out of time, these sandwiches have rescued me many times. Egg-Tomato Mayo Sandwich is one of them. It is a very quick and easy sandwich recipes but is super palatable too.
Most of the people use fresh white sandwich bread loaf for the preparation of sandwich but I had some leftover brown bread slices and so I have used brown bread here. There is no hard and fast rule to select bread for this sandwich. You can use any of your favourite loaves, it can be wheat, brown, white, wholemeal, seeded or any other bread.
In this preparation, first I have hard boiled the Eggs. Then peeled and coarsely chopped them. I have added finely chopped Tomatoes too. It gives a sweet and tangy kick to the filling.
I have used English Mustard and spicy Mayonnaise in this preparation. The strong and pungent flavour of English mustard is well balanced by spicy Mayonnaise and gives a fresh vibrant flavour to the dish. I love a bit of spices in this sandwich. So, I have sprinkled some Salt, Pepper and dry Parsley leaves on it. It really enhances the taste and flavour of the dish. You must try it once to believe me.

Ingredients:

  • 2 slices of Brown bread
  • 2 boiled Eggs, peeled and finely chopped
  • 1 small Tomato, deseeded and finely chopped
  • 2 tablespoons spicy Mayonnaise
  • 1 teaspoon English mustard sauce
  • ¼ teaspoon ground Black Pepper
  • ¼ teaspoon Dry Parsley leaves
  • Salt to taste

Instructions:
  1. Transfer the chopped boiled Eggs on a plate.

  2. Then add chopped Tomatoes on it.

  3. Add Mayonnaise and English Mustard sauce on it.

  4. Season the mixture with salt and ground black Pepper.

  5. Sprinkle some dry Parsley herbs for flavouring.

  6. Mix all the ingredients thoroughly.

  7. Spread the filing on a brown bread slice and top it with another bread slice.
  8. Carefully slice them like sandwiches.

Serving Instruction
Transfer the Egg-Tomato Mayo Sandwich on a serving plate. Garnish the plate with boiled Egg and Tomato ketchup. Serve immediately to enjoy the best taste. Start your day deliciously with healthy breakfast.
