This roasted new potato recipe aka roasted baby potatoes is a perfect side which gets ready to serve within 30 minutes. In short, it’s a quick, super easy and a fuss free recipe. These baby potatoes are crispy, delicious and overloaded with flavours. In this preparation, baby potato halves are tossed in herbs, seasonings, fat and crushed garlic cloves and then oven roasted. Roasted baby potatoes in oven is a perfect side with any main and even can be served as an appetizer with your favourite dip. I always make sure to add this versatile divine on my Easter & Thanksgiving dinner table.

What is baby potato?
Baby potatoes are miniature potatoes which get harvested before getting fully mature or grown. They are soft, sweet and creamier in texture as compared to normal potatoes. They are perfect for oven roasted recipes and get cooked quicker than large potatoes.

How to cook baby potato?
Potatoes are the largest consumed root vegetables around the world and one of the most versatile vegetables too and there is no exception for baby potatoes. As a staple food, the easiest way to prepare it is in oven. It does not matter whether it is baked or roasted.
Sometimes, you can even boil them and add them in different types of curries. You can also deep fry or air fry them to prepare delicious crisps.
When I was in India, I used to have potatoes and baby potatoes quite frequently as a side like curries or fries or chips but never tried the Roasted baby potatoes in oven before coming to the UK. But after coming here, I completely got amazed by seeing the different ranges of potato recipe for oven using different varieties of potatoes, herbs and spices. Now, even I have become a huge fan of the roasted baby potatoes in oven and always experiment the dish with new refreshing flavours.

Roasted new potato recipe is a very simple and super easy recipe. The difficulty level of preparing this dish is very low and perfect for beginners. It requires very limited and easily available ingredients to prepare the dish. The best part of the recipe is that it can be prepared in large batches without investing any extra effort.

Tips to prepare perfect Roasted new potato recipe
  • Always cut the potatoes into halves for extra crisp.
  • Always place the cut side down into the baking tray for the extra crispy layer.
  • Always pat dry the potatoes before adding seasoning, herbs, and oil for coating. It helps the potatoes become crispier.
  • Use generous amount of seasonings for the taste.
  • Don’t be shy to experiment with the flavours. Use your favourite herbs or combination of herbs.
  • Don’t overcrowd the tray and keep some space between the baby potatoes.
  • Always bake them on high temperature for the perfect texture.

How to make roasted new potato?
To prepare the roasted new potato recipe, first Switch on the oven and preheat to 220°C/200°C Fan or Gas 7. Then line the baking tray with either aluminium foil or wax paper, whichever you prefer.
Wash the baby potatoes properly and cut the baby potatoes into halves. Pat dry them for extra crispy texture. Then transfer them into a large mixing bowl.
Take 4 large cloves of garlic with skin and crush them with an edge of a rolling pin. Add them into the mixing bowl.
Add the herbs – dried rosemary and dried parsley into the bowl. As we all know fresh herbs smell best but you can also use the dried herbs for flavours. Even dried herbs work great for the recipe. Then add salt, crushed black pepper, oil into the bowl and mix all the ingredients nicely until each baby potato pieces get coated nicely.
Now place the baby potatoes on the baking tray and put the cut side down. Don’t overcrowd the tray and keep some place between the potatoes or else they will turn soggy instead of crispy.
Place the tray into the middle of the preheated oven and roast it for exactly 25 minutes.
Check whether the potatoes are done or not by inserting a fork into a baby potato. If it gets inserted effortlessly then they are done. Take out the tray from the oven and serve the roasted new potato recipe immediately.

Ingredients:

  • 750 Grams Baby Potato
  • 4 large cloves of Garlic, unpeeled and crushed
  • 1 teaspoon dried Rosemary
  • 1 teaspoon dried Parsley
  • ¼ teaspoon Black Pepper, crushed
  • ½ teaspoon Salt
  • 1½ tablespoons of Oil

Instructions:
  1. Switch on the oven and preheat to 220°C/200°C Fan or Gas 7.
  2. Line the baking tray with either aluminium foil or wax paper, whichever you prefer.
  3. On the other hand, wash the baby potatoes properly and cut the baby potatoes into halves.
  4. Pat dry them with kitchen towel or kitchen tissues.
  5. Transfer the baby potato halves into a large mixing bowl.
  6. Take 4 large cloves of garlic with skin and crush them with an edge of a rolling pin. Add them into the mixing bowl.
  7. Add 1 teaspoon dried rosemary, 1 teaspoon dried parsley, ¼ teaspoon black pepper powder and ½ teaspoon salt one by one into the bowl.
  8. Add 1½ tablespoons oil and toss the baby potatoes nicely until each potato pieces get coated evenly with the seasoning and herbs.
  9. Now transfer the baby potatoes on the baking tray and put the cut side down. Don’t overcrowd the tray and keep some place between the potatoes.
  10. Place the tray into the middle of the preheated oven and roast it for exactly 25 minutes.
  11. Check whether the potatoes are properly done or not by inserting a fork into a baby potato. If it gets inserted effortlessly then they are done.
  12. Take out the tray from the oven. Now the roasted new potato recipe is ready to serve.

Serving Instruction
Transfer the roasted new potato recipe on a serving plate. Serve immediately to enjoy the crispy edges of the baby potatoes. Serve hot or warm with any of your favourite main or simply enjoy it as an appetizer with your favourite dip.
